Aloo Vada Outline
Aloo vada is also known to be as “Batata vada”. Aloo vada is a very popular Indian fast food or traditional snack dish in Maharashtra, India. The Aloo vada is made up of boiled potatoes and after that potatoes are mashed potatoes having a thick-coated layer of Besan (chickpea flour).
It is prepared by using deep-fried in vegetable oil and served hot with green chutney or coconut chutney or dry chutneys. The Aloo vada is a circle in shape and has two or three cm in diameter. Aloo vada has various names according to states or regions of India such as Aloo bonda, Aloo vada, Batata bonda, Potato bonda, Potato vada, and Potato Fritter.
we can say that Aloo vada is mainly originated from Maharashtrian culture and after that, it gained a lot of popularity in India and the rest of the world too.a
Now a days, many changes have taken place in Allo vada such as many peoples use raw bananas in place of boiled potatoes mainly in the south Indian region and many peoples also use red chilli paste to make it spicier and hotter. Also, there is no specific shape of Aloo vada in the present time,i.e.
It may be circular, oval, square in shape, hence it totally depends upon the taste and choice of the people.
Things that should be kept in mind Before Making Aloo Vada
- Keep in mind that does not overcook or over-boiled potatoes as it turns into soft and pulpy product and has a difficulty at the time of shape giving to aloo vadas.
- You can give the shape to Aloo vada or batata vada in any form whether it is a circle or oval as you wish.
- Prepare a thick layered mixture of Chickpea flour(besan) and liquid as it helps to hold aloo mixture tightly and can be easily fried in vegetable oil.
- Serve the Aloo vada or batata vada recipe in hot form and with chutney as it tastes great.
Ingredients of Aloo vada or Batata vada
( For making 6 quantities of Aloo vada )
For Aloo Mixture:
3 clove garlic in chopped form
- Few quantity of tej patta (curry leaves) in chopped form
- 1/4th teaspoon of Haldi (turmeric) powder
- 2 teaspoon of Refined oil
- 1 teaspoon of Jeera (cumin)
1 teaspoon of Ajwain
- 3 potatoes in boiled & mashed form
- 1/2th teaspoon of salt
- 1 teaspoon of fresh lemon juice
- 2 teaspoon of Dhania (coriander) in chopped form
- 1 pinch of Hing (asafoetida)
- 1 Red chilli in chopped form
For Besan and water Mixture (Batter):
300ml of vegetable oil for frying of Aloo vada
1/4th tablespoon of Haldi powder (turmeric)
- 1/2th tablespoon of red chilli powder
- 1 pinch of hing (asafoetida)
- 2 cups of besan (gram flour)
- 2 tablespoon of rice flour
1/4th teaspoon of Baking soda (eatable)
- 1/2th teaspoon of salt
- 3/4th cup of normal water
Methods to Make Aloo vada or Batata vada
By following these mentioned steps you can easily made Aloo vada/Batata vada at home in a easy way:
Step:1 Take a Kadai (deep pan) and drop 2 teaspoons of vegetable oil and wait for a while.
Step:2 Now drop 1 teaspoon of jeera (cumin), pinch hing(asafoetida), 1 chilli in chopped form, 3 clove garlic and few curry leaves.
Step:3 Add 1/4th teaspoon of Haldi (turmeric) powder and gently stir it slightly in vegetable oil.
Step:4 Now drop 3 boiled and mashed potatoes in vegetable oil and 1/2 teaspoon of salt on it.
Step:5 Mix it well till you see that all the products are well mixed.
Step:6 After that add 1 teaspoon of fresh lemon juice and 2 teaspoon of chopped Dhania (coriander).
Step:7 Mix it well until everything is well combined and mixed.
Step:8 Prepare besan (chickpea flour) and water mixture (Batter) by dropping 2 cups of besan (gram flour) and 2 teaspoon of rice flour in a separate bowl.
Step:9 Also, add 1/4th teaspoon turmeric (Haldi) powder, 1/2th teaspoon of red chilli powder, pinch hing (asafoetida) it and 1/2th teaspoon salt to that Besan (chickpea flour) and water mixture (Batter).
Step:10 Now, Mix well until everything is in a well-combined manner.
Step:11 After that, add 3/4th cup of normal water or as per the need and gently stir with the help of whisk to a well-mannered mixture of batter.
Step:12 Add 1/4th teaspoon of eatable baking soda and mix it well for a smooth batter.
Step:13 Now, made a small oval or circle sized aloo mixture and gently flatten slightly with the help of hands.
Step:14 Now, drop that flatten aloo mixture in besan (chickpea) flour and water mixture (batter) coating gently.
Step:15 Now, gently drop that battered coating aloo in deep Kadai (pan).
Step:16 Fry that battered coating aloo until it is in reddish in colour and becomes crispy.
Step:17 Take it out from that Kadai and drop it in a separate bowl having kitchen paper, napkin to remove the excess of vegetable oil.
Step:18 Now, serve that aloo vada or batata vada with green chutney or dry garlic chutney and enjoy the taste of Aloo vada.
How to present Aloo vada or Batata Vada?
Aloo vada or Batata vada is basically served in hot form with red chilli chutneys or different types of chutneys. Many peoples eat this dish in the form of vada pav and many eat this dish as normally i.e., Aloo vada. Batata vada is mainly eaten as an evening or morning snack-type dish with a topping of green or red chilli chutney or can be served with bread. Hence, it is one of the very tasty and crispy dishes of India.
